Ingredients:
- 1 cup sushi rice
1 1/4 cups water
2 tablespoons sushi vinegar
1/2 cup soy sauce
1/2 cup vinegar
1/4 cup water
2 cloves garlic, minced
1 tablespoon sugar
Black pepper to taste
Optional garnish: thinly sliced green onions or pickled radish

Cooking Steps:
Cook Sushi Rice: Wash the sushi rice until the water runs clear. Cook in a rice cooker or pot with 1 1/4 cups water. Once cooked, season with sushi vinegar and allow to cool to room temperature.
Prepare Pork Belly: In a skillet, combine soy sauce, vinegar, water, garlic, sugar, and black pepper. Add pork belly and bring to a boil. Reduce heat and simmer until the pork is tender and the sauce is reduced, about 20 minutes.
Assemble Nigiri: Shape small amounts of sushi rice into oblong shapes. Place a slice of cooked pork belly on top of each rice shape. Optionally, you can secure it with a strip of nori.
Serve: Garnish with green onions or pickled radish and serve immediately.
