Make Almond Cream: In a mixing bowl, cream together almond flour, sugar, butter, eggs, and almond extract until smooth using an electric mixer.
Prepare Croissants: Slice each croissant horizontally but not all the way through, so they can be opened like a book.
Fill and Top: Spread a generous amount of almond cream inside and over the top of each croissant. Sprinkle with sliced almonds.
Bake: Place the prepared croissants on a baking sheet. Bake in a preheated 350F (175C) oven for about 15 minutes, or until the almond cream is set and the croissants are nicely browned.
Serve: Let cool slightly and dust with powdered sugar before serving.
