Ingredients:
- 2 cups all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt

1 cup vegetable oil
4 large eggs
2 cups grated carrots
1 cup almond meal
1/2 cup chopped almonds
For the frosting:
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract

Cooking Steps:
Prepare Batter: In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon. Stir in oil and eggs until well blended. Fold in grated carrots, almond meal, and chopped almonds.
Bake Cake: Pour the batter into a greased and floured cake pan. Bake in a preheated 350F (175C) oven for about 40 minutes or until a toothpick inserted into the center comes out clean. Make Frosting: Using an electric mixer, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until creamy.
Finish: Allow the cake to cool completely before frosting. Spread the frosting evenly over the top and sides of the cake.
