- 1 cup cornstarch
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
2 egg yolks
1 teaspoon vanilla extract
Dulce de leche for filling

Cooking Steps:
Prepare Dough: Sift together cornstarch, flour, baking powder, and salt. In another bowl, cream butter and sugar until light and fluffy. Add egg yolks and vanilla, mixing well. Gradually add dry ingredients to form a soft dough.
Shape Cookies: Roll out the dough to about 1/4 inch thickness on a floured surface. Use a round cookie cutter to cut out discs and place them on a baking sheet. Bake: Preheat the oven to 350F (175C) and bake cookies for about 10 minutes or until they are firm but not browned. Allow to cool on the baking sheet.
Assemble Cookies: Once cooled, spread dulce de leche on one cookie and sandwich with another. Press gently to spread the filling to the edges.
