Ingredients:
- 1 pound large shrimp, peeled and deveined, tails on
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1 cup panko breadcrumbs
1 cup shredded coconut

Cooking Steps:
Prepare Shrimp: Season flour with salt and pepper. Set up three shallow dishes e one with the seasoned flour, one with beaten eggs, and one with a mixture of panko and coconut.
Coat Shrimp: Dredge each shrimp in flour, dip in egg, then coat with the panko-coconut mixture.
Cook in Air Fryer: Preheat the air fryer to 400F (200C). Place shrimp in the air fryer basket in a single layer. Cook for 4 minutes, flip, and cook for another 4 minutes or until crispy and golden.
