Ingredients:
- 400g aged Gouda cheese, grated
1 clove garlic, halved
1 cup dry white wine
1 tablespoon cornstarch
2 tablespoons water
1/2 teaspoon ground nutmeg
1/2 teaspoon black pepper
For the croutons:
1 loaf French bread, cut into cubes
2 tablespoons olive oil
1 teaspoon caraway seeds

Cooking Steps:
Prepare Croutons: Preheat oven to 375F (190C). Toss bread cubes with olive oil and caraway seeds in a mixing bowl. Spread on a baking sheet and bake until golden and crisp, about 10-12 minutes.
Rub Fondue Pot: Rub the inside of the fondue pot with the cut sides of the garlic clove.
Make Fondue: Add white wine to the pot and heat gently until hot but not boiling. Gradually add the grated Gouda, stirring constantly in a zigzag pattern (not a circular motion) to prevent the cheese from balling up. Dissolve cornstarch in water and stir into the cheese. Continue to cook, stirring constantly, until the cheese is melted and smooth.
Season: Stir in nutmeg and black pepper. Serve: Keep the fondue warm over a low flame. Serve with the caraway croutons for dipping.
