Ingredients:
- 4 quail, cleaned and split
2 tbsp achiote paste
2 tbsp olive oil
Juice of 1 lime
1 tsp salt
1/2 tsp black pepper
2 peaches, halved and pitted

Cook Time: 20 minutes
Total Time: 40 minutes (plus marinating time)
Cooking Steps:
Marinate Quail: In a bowl, whisk together achiote paste, olive oil, lime juice, salt, and pepper. Add quail and toss to coat. Marinate in the refrigerator for at least 2 hours.
Prep Peaches: When ready to cook, preheat the grill to medium-high heat. Brush peaches with a little olive oil.
Grill Quail and Peaches: Grill quail for about 10 minutes on each side or until fully cooked and slightly charred. Grill peaches cut-side down for about 5 minutes or until they have grill marks and are slightly softened.
